hidden frustrations

I've been trying to bake more recently. Baking has always been a fun, relaxing activity for me, and god knows we can all use as many of those right now as we can get. It also means a more robust (and cheaper) supply of comforting baked goodies, which... see above.
BUT
This isn't my kitchen.
It's not set up the way I would want my kitchen to be. There's not really a section of countertop reserved for things like kneading or rolling out doughs, nor is there an adequately sized stretch that can be conveniently cleared for that sort of thing. My stand mixer (which could at least reduce the need for kneading space) is currently packed up in a storage container. And it's not really that big of a deal--there are plenty of things I can make that don't require anything more than a few bowls and a good mixing spoon.
Except I really want to make cinnamon rolls, and there is just no way that's happening in this space.
I'm making drop scones with cranberry and dark chocolate chips instead. Hopefully they'll be good. My pastry blender is also packed in a box in a storage container, so I'm not super super confident that I cut the butter in enough (a quick check of the oven says there's lots of melted butter on the baking sheet, but I've also never actually made scones before, so... I dunno, maybe that's normal? I hope that's normal, I'm hungry).
